Slow Cooker Chicken Fajitas

Spice up your weekly dinner menu with chicken fajitas made with lime and honey.

Accomodated Diets: Gluten Free, Dairy Free, Low Fat

Ingredients

1 can of diced tomatoes and green chilies

1 onion, sliced

3 bell peppers, sliced

Chicken breasts

2½ tsp. chili powder

2 tsp. cumin

1 tsp. paprika

¾ tsp. coriander

1 Tbsp. honey

2 Tbsp. lime juice

Instructions

  1. Add vegetables and chicken to crockpot. Season with salt and pepper, then add other spices. 
  2. Cook on low heat for six to eight hours. 
  3. Mix honey and lime juice together. 
  4. After cooking, shred chicken. While chicken is out, add honey and lime mixture to crockpot. 
  5. Add chicken back into crockpot. 


Serve with tortillas and fajita toppings.
