Waldorf Chicken Salad

This clean-eating chicken salad is part of The Busy Person’s Guide to a 7-Day Cleanse, MyHealthKC’s week-long clean-eating program designed to help you jumpstart your health goals.


1 tbsp. lemon juice

¼ cup dairy-free yogurt

¼ cup low-fat mayonnaise

1 large apple, chopped

1 Bosc pear, peeled, cored, and diced

1 cup seedless grapes, halved

2 celery stalks, chopped

1 cup cooked chicken breast, chopped

¼ cup raisins

¼ cup walnuts, chopped

Salt and pepper to taste


  1. Combine lemon juice, yogurt, and mayonnaise in a small bowl and whisk well.
  2. Add the chopped apple, pear, grapes, celery, chicken, raisins, and walnuts to a large bowl and toss. Pour the prepared yogurt dressing over the salad and toss well. Season with salt and pepper as needed.
  3. Serve over spinach. Refrigerate leftovers.
